Gabrielle Wilson, from Rhayader, Wales, has always had a passion for food — not just eating it, but creating it. That passion led her to pursue a career as a chef, and she’s now studying for a Level 3 Diploma in Patisserie and Confectionery at NPTC Group of Colleges while working three to four shifts a week at Chapters Restaurant. 

Her journey into the culinary world began with a Level 1 and 2 apprenticeships — an experience she describes as “amazing” — and one that helped her build confidence and skills in a real kitchen environment. “It’s a great way to develop your skills in a live environment,” Gabrielle says. “I got the opportunity to work for a professional chef, which is something I couldn’t have got in the classroom.” For anyone considering an apprenticeship, she offers simple but valuable advice: “Be willing to learn and learn from the people around you.” 

Gabrielle was introduced to WorldSkills UK Competitions through her college and quickly discovered a love for competing. After being highly commended at the National Finals in 2023, her dedication and talent earned her a place on Team UK for EuroSkills Herning 2025. 

Being selected for Team UK is, as Gabrielle describes, “an amazing achievement — not just for me, but for my college too.” Coming from a smaller institution, she says it means a lot to bring them recognition and appreciation for their ongoing support. “They’ve helped me through this whole journey, so it feels great to represent them.” 

Her family, friends, and employer have been equally supportive. “Everyone thinks it’s such a great opportunity,” she says. “My mum’s been telling everyone!” Her employer, despite running a small business, has made sure Gabrielle can attend training and bootcamps, helping her make the most of the experience. 

Gabrielle’s preparation for the competition is ongoing and focused. She’s continuously developing and refining her skills — whether at home, in college, or at work — and is always eager to expand her knowledge. Her college is arranging for professional chefs to provide one-to-one training, which she says will make a big difference to her development. 

She believes this hands-on competition experience is directly strengthening her career. Working in a professional kitchen while studying has helped bridge the gap between the classroom and the real world. 

Achieving a place on Team UK has already fulfilled one of Gabrielle’s long-held goals — but now she’s looking ahead. Her next ambition is to qualify for WorldSkills Shanghai 2026. After that, she hopes to work abroad, gaining experience across a variety of events and cultures. 

As EuroSkills Herning 2025 approaches, Gabrielle says she’s most looking forward to competing. “I love being in a competition atmosphere. It really motivates me — and I’m excited to see where I stand among my European peers.” 

Reflecting on her journey, Gabrielle says she would absolutely recommend WorldSkills UK to others. “It’s an amazing opportunity, and one that might only come around once.”
