The focus of this technical masterclass is on carving skills. It demonstrates the technique of roast chicken carving and presentation, a core skill that is involved in high-class restaurant and hotel carving, with an emphasis on planning, co-ordination and communication
You will start by learning about the seven steps to developing excellence in your occupation, as well as how the principles of lean can be employed in the hospitality and lifestyle sector.
Once you have completed these stages, watch a six-part video demonstration which offers a guide to carving at guéridon in front of customers. The masterclass then guides you to perform the tasks shown in the videos and offers a set of downloadable resources to assist you in your practice.
Suitable for Level three (Level six in Scotland) learners, this masterclass takes around two hours to complete. You are required to successfully answer a series of multiple choice questions at the end of your learning before being awarded a downloadable WorldSkills UK certificate.

display the technical skills to carve the roast chicken for four portions
